Modern fuel-injected engines are more sensitive to deposit build-up than their older ancestors, particularly when it comes to injector deposits.  Build-up of these deposits in the fuel metering and combustion areas are the biggest fuel/engine reasons why vehicle performance drops as the engine gets older.

Older gas-powered vehicles have battled deposits in the carburetor area.  These deposits affect the vehicle's ability to maintain the correct fuel-air ratio, which drops their performance.

Diesel engines are also prone to deposits due to a lack of standardized requirements for deposit control additives in diesel fuel.
